According to this http://www.geforce.co.uk/hardware/technology/4k/supported-gpus the GTX 680 can do 4K at 30fps over HDMI and 4K at 60fps over Displayport. The equivalent era AMD Radeon HD 7950 can also do 4K but according to MacVidCards has some issues with SST screens. (This might be personal bias on their part as they have a vested interest in selling flashed Nvidia cards.)

It should also be noted that some Nvidia cards can even do 5K with the Dell UP2715K.
Currently the hot-spot would be a GTX 980Ti, the 1080 is not yet supported with Mac drivers.

Yes you can leave the GT 120 in, example users would be an additional screen but this for most people is unnecessary or using it while 'flashing' the firmware of a PC GTX-680 via Windows and Boot Camp. If you are short of slots you might as well remove it.
